So I came to visit Union Hall soon after returning to Waco and chose to get a bowl at Koko Ramen... man was it great! I got the tonkotsu ramen and bao buns! The broth is rich, the pulled pork is smokey and tender, the noodles are cooked to a perfect balance of soft and al dente, where it's soft as it should be yet still toothsome. The boa buns with pork belly are where it's at, fresh cucumber and jalapeƱos with hoisin drizzled on! GET AN EXTRA AJITAMA EGG! They've got the brine down to a potion and you'll know on the first bite! I will definitely be returning, as should you if y'all get to give it a try! Level 4 Bowl is the perfect spice btw!

Atmosphere: Located inside Union Hall so not much to report. Food: This was my first visit so I asked the cashier for suggestions and he recommended that I try the Tonkotsu Ramen (Triple stock, pork belly, noodles, mushrooms, scallions, Ajitama Egg, pickled ginger, and black garlic oil. The heat was about a 3 on a scale of 5. The noodles were the star of the show and they did not disappoint me. The noodles were elastic, strong and not overcooked. I'm not a big fan of the texture of pork belly but it was still very flavorful nonetheless. I loved the flavor of the stock. The pickled ginger and scallions also had a nice depth of flavor to the dish. I did not like the Ajitama egg (a soft-boiled marinated egg that you will usually find in a Ramen dish). To cook these eggs properly is a bit of science and when they are prepared incorrectly the taste is less than pleasing. I took one bite and the only thing I can say is that I didn't take a second bite) I would definitely return and look forward to my next visit.

Inside Union Hall with a bunch of other food halls. If you're looking for something salty and spicy, this is the right spot. Ramen was ready quickly and my tonkatsu ramen had amazing bbq pork belly and a super flavorful broth. I scarfed down the noodles quickly and the broth was too salty to continue eating without noods. Would've been awesome if it came with an egg. I forgot to add one and didn't bother getting back up to order one. Service could've been a tad friendlier. I'd definitely come back and order the tonkatsu ramen again, and will remember to add an egg. It was over 100 degrees when I had this, so that's saying something! Well either I'm crazy or it's that good.
